Each of our charcuterie and small plates are specifically selected to pair with the beverages we serve. After owning Cafe Roche in Winston-Salem NC. Sarah Hummell, a Sommelier, and Certified Hospitality Beverage Specialist wanted to expand on her specialty coffee concept by adding wine and craft beer. She chose Holly Springs for its close proximity to Fort Bragg, as her husband is a Firefighter there. She opened SiP Bistro on June 15th, 2013 with just coffee, then wine at the end of July, and then added tapas and charcuterie in August. Originally from Buffalo NY, Sarah had a dream of owning a coffee shop at age 14. She worked at 6 local coffee shops before attending college. She received her first wine certification at age 19 while attending Schiller International University, located in Engelberg Switzerland. She then traveled to 13 different countries studying cafe culture. She attended Niagara University College of Hospitality and Tourism Management, where she earned a Bachelor of Science degree in Hotel Restaurant Management. After graduation, she was a Food and Beverage Manager for Delaware North Corporation, where she ran all the food and beverage outlets at a NY casino. She then went in to run hotels for Red Roof Inns. She led her properties through full renovations and later to high rankings among the company owned properties. By the end of her tenure, she was the youngest General Manager in the company and the only one to run more than 2 properties. In 2008, she achieved her dream of owning a coffee shop. While controlling expenses and paying close attention to quality, Cafe Roche managed to survive the recession our nation was experiencing. Her husband Justin accepted the postion as a Firefighter on Fort Bragg. He commuted 2 hours for 2 years.
